Tutti Frutti Cake



Hey friends am back after a long gap, shifted from Sweden to India so was not able to keep the blog updated as was busy to settle the things here, during this time I tried various cakes, but unable to post them here.
Anyhow here I come with a new recipe  this one is little different as I tried this with egg, but everyone loved it so much, so suggest you to try this simple and yummy cake.




Ingredients:

All Purpose flour - 2 cups

Tutti Frutti  - 1/2 cup
Butter - 3 tbsp
Milk - 3/4 cup
Egg - 2 (at room temperature)
Baking powder - 2 tsp
Baking soda - 1 tsp
Vanilla essence - 4 tsp
Cashew or Tutti frutti - 1 tsp ( to sprinkle on top, I used tutti frutti)


Method


Sieve maida, baking soda and baking powder together.
Mix tutti frutti with 2 tbsp of flour and keep it aside.
Take butter and sugar and mix them well. Take one egg at a time and beat it well before adding to the butter sugar mixture. Beat the whole mixture well and then add milk in the same, beat it well till it become little creamy. Now add vanilla essence and beat a little to mix it.
Add the tutti frutti and fold the mixture.

In the greased pan pour the mixture and bake it in a pre heated oven at 180 degree for 35 minutes. once it is baked, keep it out and let it cool, then cut it into pieces and serve with tea or coffee. Kids love it simply.

Eggless Marble Cake





Ingredients

All purpose flour (Maida) – 2 cups
Condensed milk / Milk powder - 4 tbsp
Baking powder - 2 tsp
Baking soda - 1/2 tsp
Butter - 1/2 cup
sugar - 3/4 cup
Milk - 1 ¼ cup
Vanilla essence – 1 ¼ tsp
Cocoa powder - 2 tbsp
Hot water - 4 tbsp

Method

Take your baking bowl and whisk that evenly with the butter/oil, meanwhile keep the oven to preheat at 180 degree.
Sieve Maida with baking powder and baking soda in a bowl and keep it aside.
Beat the sugar and butter together, till it become fluffy, now add milk and beat well again until it become creamy. Add condensed milk and vanilla essence/sugar and mix well. While beating mix the Maida mixture prepared above.
Take less than ¼ batter in a bowl, add hot water and cocoa powder, mix it well and keep it aside. Now you have two different batters with you.
Pour half of the vanilla batter in the baking bowl and settle it properly, add half of the chocolate batter in small circles, and with the help of fork make different shapes like marble, add the remaining vanilla batter and again make the circles with chocolate batter and make the patterns.
Don’t overdo it otherwise proper texture won’t be visible.
Keep the batter in oven for 40-45 minutes or until a fork inserted in the cake centre will come out clean.
Cool down the cake, cut it into pieces and enjoy it with tea or coffee.

Eggless Blueberry cake





Ingredients
All purpose flour (maida) – 2 cups
Curd – 1 ½ cup
*Curd should be of room temperature

Baking soda – 1 ½ tsp
Baking powder – 1 tsp
Vanilla essence – 1 tsp
Butter – 150 gm
*Instead of butter you can also use ¾ cup cooking oil.

Sugar – 1 cup
Blueberries – 1 cup

Method
Sieve Maida in a bowl and keep it aside. In a plate place the blueberries and spread 1 tbsp of maida on them and mix them well.
Take your baking bowl and whisk that evenly with the butter , meanwhile keep the oven to preheat at 180 degree.
In a bowl mix the curd and sugar. Now add the baking powder and baking soda and mix it well. Keep this mixture aside for 5 minutes. After five minutes you can notice some bubbles in the curd mixture.
Now beat the butter/oil together with the curd mixture, add vanilla essence, maida in small proportions and keep on beating. Once done keep the beater aside and using the spatula fold the blueberries gently into the batter (only ¾ blueberries).
Now transfer the batter into your baking bowl, spread it evenly. Place the remaining blueberries above the batter and keep it oven for 30 minutes to bake. After 30 minutes insert a tooth pick into the cake if its came out clean it means the cake is done otherwise keep it in oven for another few minutes.
Now take out the cake, cool it and serve it either with tea/coffee or with ice-cream. It will complement both J




Daal Makhni


Hi Friends, was bit busy in office so was not able to upload more dishes in the week, but now as its weekend so am here with a easy to make and tempting daal makhni recipe


Ingredients
Whole black lentil (sabut kali uradh) – 1 ½ cup
Red Kidney (Rajma) – ½ cup
Onion – 1 cup
Tomato - ½ cup
Ginger – 1 tbsp
Garlic – 1 tbsp
Cumin Seed (jeera) – 1 tsp
Turmeric – ¼ tsp (optional)
Coriander powder – 1 tsp
Red chili powder – 1 tsp
Cream – ½ cup
Salt
Clove powder – ½ tsp

Temper
Red chili (sabut sukhi lal mirch) – 1
Coriander (whole coriander seeds) – 1 tsp
Cinnamon stick – 1
Cloves – 4
Cardamom – 2

Garnishing
Coriander leaves
Green chili
Cream

Method

Boil the soaked Lentil and red kidney in the cooker by adding the cinnamon stick, cloves and cardamom.  Give at least 6 whistles so that the lentil will be mushy.
Using the spatula mash the lentil.

In a pan, heat the oil , add Cumin seed, when the seeds starts cracking, add whole red chili and ginger garlic paste , cook it for 2 min then add Onion and cook it for at least 4 min , when the onions became little brown add tomatoes with all the dry spices (turmeric, coriander powder, red chili powder, clove powder and salt), cook the mixture till it start leaving oil.
Add the lentil mixture and give it a stir, add water and bring a boil, now add cream and cook it for another two minutes.

Now transfer the daal into a bowl and garnish it with coriander leaves , green chili and cream.
Serve it hot with naan or zeera rice.

Egg less Apple Cinnamon cake

It’s the first post of my blog, so wanted to start it with a sweet and salty [just like me ;) ] apple cake.
I got this recipe from net did some amendments so that I can reduce some calories without compromising with the taste, and it worked, everybody liked it so much..




So here is the recipe..

Ingredients:

Peeled and grated Apple - 2
All purpose flour(Maida) - 2 cups
Butter - 2 tbsp
Brown sugar - 3/4 cup
Milk - 1/2 cup
Baking powder - 2 tsp
Baking soda - 2 tsp
Salt - a pinch (I used salted butter so no need of salt)
Vanilla essence/sugar - 1 tsp
Cinnamon - 2 tsp
Raisins - 2 tbsp

Method:

Keep the oven to pre heat at 350 deg F.
Meanwhile sieve together the flour, baking powder and baking soda, do it twice so that everything get mixed easily.
In a pan take butter and sugar and beat it together until it became little fluffy.
Now start adding the flour, milk and apples in the butter mixture, keep on beating while adding. If you feel that the batters is getting thicker then add little more milk.
Add vanilla sugar and raisins and fold the batter.

In a baking dish evenly spread some oil/butter so that the cake won’t get stick to the base, pour the mixture into the pan and keep it in oven for 35-40 minutes.
To check whether the cake is baked or not insert either a tooth pick or a knife, if it comes out clean then it means that your cake is ready.

Cool it and serve, it taste yummy with ice-cream, I like it with both Vanilla and chocolate ice cream.
